Matters start with a fairly interesting introduction and primer to honey, including a guide about how to taste honey which is not nearly as self-explanatory as you might think. This reviewer has nothing against honey as an ingredient but even the presence of a honey flavour wheel, to help connoisseurs really maximise their enjoyment did seem to be a step perhaps too far. Despite the book taking you through a typical year at the author's home it must be noted that honey varieties may vary dependent on your locality, but then part of the enjoyment might be trying to find a broadly compatible honey type that IS locally available and experimenting along the way.

The beginning of each chapter tells you about that particular honey--where it's made and flavor notes including color, smell, taste and aftertaste. There are also a few pages scattered throughout the book telling about the bee colonies. All-in-all, this is a very interesting book with great recipes.
