You could try cutting the cauliflower up very finely and mixing all the other ingredients by hand, but the texture may be a little different and definitely not as smooth. The nuggets are super soft, meaning they are perfect finger food for toddlers and babies.
If you prefer them to be crispy then you could always roll them in an extra coating of breadcrumbs and fry them rather than bake them. My daughter loves these!

Hi Despina, I use raw veggies, the reason I grate them is so that I can squeeze the juice out of them. This stops the nuggets being too wet. Hi Felicity, so glad you liked them! You could try using a chia or flax egg. Feels really wet and sloppy. Any way I can firm it up easily? Hi Elaine, did you squeeze the juice out the veggies and drain the beans really well? Chilling it in the fridge should help and if it is still too wet you could add some breadcrumbs to the mixture to soak up some of the moisture.

Lightly crease a baking sheet with oil or line with baking paper. Squeeze as much water as you can from the carrots and zucchinis i use a clean tea towel to do this. Put the cannellini beans into a food processor and process until smooth. Add the carrots, zucchini, garlic, cheese and herbs and continue to process until combined. Place the mixture into the fridge for approx. Place the beaten egg in a bowl and the breadcrumbs on a flat plate.
