As long as it does not get too hot and the soil is reasonably rich heat and poor soil make it quick to bolt and correspondingly bitter Little Gem's crunch is in the whole thing, whereas Lobjoit's Green Cos is much bigger and rather slower to mature but each individual leaf has a perfect bite to it.
If grown slowly, organically, they really taste. All in all, Lobjoit's Green is my perfect lettuce. However, it is only really possible to produce a crop between June and September, so you need a wider range to provide the daily, year-round supply I want from the garden as well as some variety. There are loads of other rare and no doubt fascinating varieties of lettuce, but in the end you must choose the ones you like to eat, rather than ticking off the varieties like a train spotter. And salads don't stop at lettuce. Incidentally, I read the other day that most Americans regard the word 'salad' to mean iceberg lettuce - it's enough to make you weep.
